5 Dinners and Thanksgiving Heroes

Happy Monday! Today is going to be a great day and I’m so glad you’re here. 🥰
It’s officially November, and I’m already so excited for Thanksgiving and Christmas this year! I’ve been begging my husband all weekend to let us put up the Christmas tree early (he’s firmly in the “after Thanksgiving” camp), so stay tuned to see who wins that debate.
I volunteered to make all the sides for our family Thanksgiving this year, which has sent me down the rabbit hole of recipe-hunting and side-dish strategizing. It’s made me think: what are the non-negotiable sides that have to be on the table? I’d love to hear from all 1,138 of you in the poll at the end!

🍽️ What’s for Dinner
Easy Baked Gnocchi - Full of protein and veggies, this comforting one-pan meal is the perfect solution for a busy weeknight. It works with any type of ground meat and I know my kids will be coming back for more.
Whole30 Chicken and Sausage Gumbo - This classic recipe is one I hadn’t made in a while, but it’s still as good as ever. It’s perfect for a cool fall evening with minimal ingredients, maximum comfort, and something everyone at the table will enjoy.
Salmon BLT Salad with Chive Ranch Dressing - I had the most incredible salmon cobb salad last weekend in Charlotte at Sixty Vines and I can’t stop thinking about it. After much research, I think this recipe comes closest to it with the dressing included! I’m excited to try and remake it at home.
Chicken Parmesan - This is pretty close to what I make (I don’t follow a recipe) with a few small tweaks. I coat mine in gluten-free baking flour before dipping in egg, then use a mix of grated parm, panko and Italian breadcrumbs for extra crunch. Serve it up with spaghetti for the coziest meal that my kids always devour!
Teriyaki Meatballs - As the holidays approach, I’m excited to share a few versatile recipes that work perfectly as both appetizers and main dishes. Serve them with toothpicks for a quick, crowd-pleasing bite, or pair them with rice and roasted veggies for a wholesome weeknight family dinner.
