State of the Wooed (+Recipes, Confessions & Finds You’ll Love)

Before we dive into dinner recipe ideas, an anonymous money confessional from a Utah mom, and my favorite finds of the week, I just want to take a second to say THANK YOU for opening this newsletter today (and over the past 13 weeks)!

Starting this weekly email has truly reignited my love for creating. After pushing hard on social (so many viral videos 😮‍💨) and development in 2023 (hello, 100 recipes by year’s end!) and going through four straight years of pregnancy → postpartum → pregnancy → postpartum, my mind and body have felt like they’ve been in constant flux. Managing this brand while working a full time job and having two littles has been hard but so fulfilling and if you’re in the same boat, just know we’re in the thick of it!

For the first time in a long time, I finally feel like I can breathe again and this newsletter has been a huge part of that joy. Going forward, I’ll keep focusing on inspiring you in the kitchen especially with healthy, whole meals your kids and family will love. Quick breakfasts, school lunch ideas, and easy yummy dinners are what I want to focus on. Honestly, I’ve been a madwoman in the kitchen lately and I can’t wait to share all the new recipes with you soon.

🍽️ What’s for Dinner
  • Vegetable Beef Soup - Prep this the day before or over the weekend and simply reheat for a fast and hearty dinner. Love that the beef is so tender, which is perfect for baby led weaning.

  • Crockpot Lasagna - I’ve always loved lasagna, but honestly, I never have time (or patience) for all that layering. That’s why I’m excited about this ‘deconstructed’ slow cooker version that pretty much does it all for you. I know my kids will love this too.

  • Salsa Verde Chicken Enchiladas - Minimal ingredients and maximum flavor. Upgrade Taco Tuesday with this recipe!

  • Air Fried Salmon Nuggets - This might be the easiest salmon recipe you’ll ever make! It’s perfect for little ones served as is, and for adults, just add it to a bowl with greens, grains, and whatever toppings your heart desires for a quick and healthy meal.

  • Creamy Garlic Sun-Dried Tomato Pasta - For extra protein, add chicken breast to this simple pasta dish. It’s an easy upgrade that makes it even more satisfying for the whole family.
